MAI TAI RECIPE This easy Mai Tai most closely resembles the 'Tahitian Beer' home-fermented beverage of the French Polynesia. It is easily mixed under open ocean conditions with simple ingredients. Note that a 'dash' is considered ~3-5 drops. Fill glass 3/4 with pineapple juice 1-2 ounces rum (various international flavors and strengths o.k.) 1/2 teaspoon grenadine syrup *Dash lime juice (concentrate o.k.) *Dash almond extract This no-frills Mai Tai is consistent under all conditions and comparable with most popular recipes. *Note: The lime and almond add 'depth' and authenticity to the Mai Tai, but can be substituted for extra grenadine for a lighter and cleaner Mai Tai, as is often served in establishments. Orange juice can also be used in conjunction with, or replacement for, pineapple.
